Every once in awhile I crave a treat and love when this treat can actually hold some healthy ingredients and keep sugar to minimum. I’m not a baker so I was relieved when this recipe turned out!
Banana Chocolate Muffins
1 C almond butter
3 Tbsp honey
2 tsp vanilla
2 ripe bananas mashed
1 tsp salt
4 scoops vital proteins collagen
1/2 C cocoa powder
1 1/2 tsp baking soda
2 tbsp coconut flour
1/2 c chocolate chips (optional)
Sliced almonds for topping (optional)
Preheat oven to 350. Mix all of wet ingredients (almond butter, honey, eggs, vanilla, bananas) in a medium bowl. In a separate bowl mix together dry ingredients (cocoa, salt, baking soda, coconut flour, collagen. Add dry ingredients into wet and mix well. Add chocolate chips if using. Pour into muffin tins 3/4 full. Bake for 18-20 minutes. Let cool completely.
