Almost Jambalaya
We returned from vacation Friday night and spent the weekend at a CrossFit competition which means we haven't had a chance to go grocery shopping yet. Lucas scrounged through the fridge and freezer and came up with one of my favorite last minute go to meals. A makeshift jambalaya of sorts! We usually have these ingredients on hand and it's a quick easy meal to whip up. Enjoy!Almost Jambalaya2lb smoked kielbasa diced1 green pepper diced1 red or yellow pepper diced1 small yellow onion3 celery stalks diced1 C diced cauliflower15 oz diced tomatoes1 C uncooked rice2 C chicken stock2 bay leaves1-2 tsp garlic powder1/2 tsp salt1/2 tsp pepper1 tsp dried oregano1 tsp dried thyme1/2 tsp paprika (I like using smoked)Handful of chopped fresh parsley1 tbsp olive oilBrown the kielbasa in a large skillet on medium high heat, remove. Add olive oil and add, peppers, onion, celery, riced cauliflower, bay leaves and the rest of the seasonings including parsley and cook on medium heat until veggies are softened, about 10 minutes. Add meat, diced tomatoes, rice, chicken stock. Cook until rice is cooked, about 20 minutes. Check and stir during cooking and add more chicken stock if needed to make sure rice is completely cooked. Remove bay leaves and adjust seasonings if needed.
