Creamy Fajita Chicken and Rice
Lucas has been helping with the meal planning and he’s been loving the recipes from Stealth Health. I modified this one a ton so wrote out what I did!
Ingredients
2lb chicken thighs
Handful of cilantro
Juice of 1 lime
1 packet of fajita seasoning
1/4 C olive oil
4 bell peppers
1 sweet onion
1 cup Greek yogurt
1/2 tsp cumin
1/2 tsp smoked paprika
1/4 tsp chili powder
Juice of 1/2 lime
1/2 C cheddar cheese
2 cups white rice cooked according to directions
Directions
Chop the cilantro and mix with olive oil, lime juice, seasoning packet. Marinate chicken thighs for a couple hours to overnight.
Dice 4 bell peppers, 1 sweet onion, add a drizzle of olive oil and salt and mix to coat. Bake at 450 for 30 minutes, mix halfway through.
Grill chicken, then dice.
Mix yogurt, seasonings and cheese together.
Mix together chopped chicken, pepper/onion mix, and greek yogurt in a large bowl.
Assemble rice, then meat/pepper mixture. I topped ours with avocado. So good!
