Gluten Free Peanut Butter Cookies

A year ago, I was so hungry for peanut butter cookies. Straight up peanut butter. I can only do so much of other nut and seed butters. I wanted a gluten free recipe, but wasn't impressed with the looks of any online. So, I concocted my own! I drastically reduced the amount of sugar in this recipe and of course added collagen peptides!
  • 1 C peanut butter
  • 2 eggs
  • 1/2 C softened butter
  • 3/4 C coconut sugar
  • 1 tsp Vanilla
  • 1 C cassava flour
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 2 scoops of Vital Proteins Collagen Peptides
  • Dash of salt
Preheat oven to 350 degrees. Cream together first 6 ingredients. Add remaining dry ingredients. Create 1 in. balls and place on parchment paper lined cookie sheet. Create crisscross pattern with a fork to flatten. Bake about 10 minutes or until light brown. Let cool completely as they tend to be a little crumbly when warm.
